CUT INTO THICK SLICES OR OPEN LENGTHWISE AND SEAR. CHARCOAL GRILLING IS RECOMMENDED, COMBINED WITH WINE-BASED SAUCES. IT ALSOGOES VERY WELL WITH FOIE GRAS AND IBERICO PORK HAM SHAVINGS.
