Cut taken from the quartering of the Iberico pig, with a flattened and irregular shape, located on the neck part. Its name is due to the great resemblance to the Shoulder Muscle. It corresponds to the cutaneous muscle on the neck. The cut isvery marbled and its meat is tasty, juicy and tender, with a pale pinkish color.
