MERINO LAMB SHORT LOIN.

YOUNG LAMB. MAXIMUM TENDERNESS

The lamb short loin is a premium, exceptionally tender cut taken from the rear portion of the loin, located between the rib section and the leg. This no-rib presentation includes both the tenderloin and the striploin, joined by a section of the spine bone, which gives rise to bone-in chops reminiscent of the classic T-bone. It can be prepared whole as an
impressive roast or expertly portioned into elegant, individual chops. With its delicate texture and subtly sweet, mildly gamey flavor, the lamb short loin is ideal for everything from simple seasoning to more elaborate marinades and spice rubs, offering both versatility and refined appeal for high-end culinary application.

Our Iberian lamb meat comes from carefully selected lambs born and raised in the heart of the Dehesa in the Valley of Los Pedroches.

At around 80 days of age and weighing approximately 60 lb (27kg), the lambs are brought to our Classification Center, where they are fed a high-quality grain-based diet. Once they reach 90 to100 days and approximately 70 lb (32 kg), they are ready for harvest.

Lambs never enter the Meat Processing Center at over six months of age, one of the key factors behind the exceptional tenderness of our meat.
