Cut taken from the quartering of the Iberico pig,with a triangular and wide shape, like a fan, located in the front part of the loin. Highly infiltrated with fat, with little lean and a firm silky texture, unique and suggestive, that surprises from the first bite. Its color is pale red and pinkish.
CHARCOAL GRILLING OR NORMALGRILLING IS RECOMMENDED, SEASONED WITH FLAKE SALT. ALSO IBERICO RICE WITH RIB SKIRT IS VERY SUGGESTED.
